Hunter Valley Semillon has earned an enviable reputation over the years for its unique character and excellent quality.
It is usually made in an un-oaked style which will age for a significant period of time. It has citrus fruit characteristics of lemon and lime and is a crisp, clean, refreshing drink.
Left for 3-4 years, it will develop hints of honey and a smokiness similar to barrel aging.
Semillon is the predominant variety on the Ernest Hill Vineyard, with three blocks producing slightly different styles. The Cyril comes from the smallest block on the vineyard, being a little over one acre.
Cyril was father and grandfather to the Wilson family.
The 2006 vintage Chardonnay/Semillon is the first blended variety produced by Ernest Hill. The delicious stone fruit flavours of Chardonnay are blended with the crisp citrus flavours of Semillon to produce a wine which is full flavoured but fresh and crisp. Perfect for those hot summer days and fresh summer foods.
The Hunter Valley is renowned for producing some of Australia's finest Chardonnays. The warm climate is conducive to producing full bodied Chardonnays of rich fruit character, enhanced with the flavours of oak.
The Alexander Chardonnay comes from the small Alexander block at the top of the vineyard. This wine is named after Brett Alexander Young, nephew and cousin of the Wilson family. Brett excelled at body boarding and was ranked in the top 10 in the world. He spent his later years in Japan teaching the locals to surf.
The 'Chicken Shed' Chardonnay comes from the block on the northern side of Ernest Hill, next to our neighbour's chicken sheds. It is a lightly oaked style of wine with fresh Chardonnay fruit flavours enhanced by the toasty vanilla flavours from new French oak barrels.
We also produce a sparkling chardonnay - our "blanc de blancs" for those that love a great aussie bubbly.

The name of this wine is derived from the location of the block being on the other side of Ernest Hill from the Cellar Door, hence 'Over the Hill'.
Rich peach and nectarine flavours enable this wine to stand alone without the addition of any oak.
This cheeky Portuguese varietal is renowned for its lovely balance of acid and tropical fruit characters; ripe passionfruit aromas with hints of early picked stone fruit, and so is best enjoyed when young, fresh and crisp.
The Rosalie Joan block is three acres and located at the bottom of the vineyard, adjacent to the dam.
The vines are twelve years old.
Rosalie Joan was sister and aunty to the Wilson family.
Ernest Hill is one of only four or five vineyards in the Hunter Valley growing the Traminer variety.
The Ernest Hill Traminer vines are 35 years old, grafted onto Shiraz root stock, and produce an aromatic wine with intense fruit flavours.
The grapes for the Maisie Evelyn are picked early with a higher acid level and moderate levels of sugar, producing a wine which is not overly sweet but displaying the sweetness of lychees and a subtle hint of rosewater spice - Turkish Delight in a bottle!
So don't be frightened to fire up the chilli factor - this wine is a perfect partner for screaming hot Thai Jungle curries down to 'asbestos-proof' Indian Vindaloos!
Maisie Evelyn was mother and grandmother to the Wilson family.
Ernest Hill Rose is a lighter style red wine made predominately from Shiraz grapes. It displays luscious Strawberry and Cherry flavours and is designed to be served chilled for a refreshing and fruity accompaniment to a wide variety of lighter style foods such as pasta, pizza, antipasto, seafood and poultry.
Only limited amounts of Merlot have been planted in the Hunter Valley as it can be somtimes difficult to grow and can be inconsistent in quality from year to year. However, when the right conditions do occur, the Hunter can produce Merlot which is rich in spicy plum flavours, with those typical earthy overtonesn In keeping with our premium wine philosophy, Ernest Hill only produce Merlot when the conditions are the best.
The 'Rodney' Merlot is a more traditional style which is dry and savoury with plenty of character - not one of your non-descript Merlots!
The 'Dam' Merlot is a lighter, slightly sweeter style than the 'Rodney' and will appeal to the wine drinker looking for an easy drinking smooth style of red wine.
Here at Ernest Hill we produce three styles of Shiraz.
From the Shareholders block comes a medium style of Shiraz. This usually spends 5-8 months in a combination of new and one year old French and American oak, and is further enhanced by the addition of a small amount of Viognier (thus giving the wine a hint of the Rhone Valley style).
From the William Henry block comes our traditional Hunter style. 100% Shiraz matured in brand new French and American oak, for close to 12 months to produce a heavier, longer term cellaring style.
From the Wreckers Block comes a light style of Shiraz. This Shiraz was matured in older oak for only 6 months to make a softer, more European style red.
This wonderful Spanish varietal, which is most known for its use in the famous Rioja wines, ripens early in the Hunter and results in a medium bodied wine with excellent cellaring potential.
This wine comes from the smallest block on the vineyard, 1 acre only, which was planted back in 2006.
This is the noblest of all French grape varieties. A native of the Bordeaux region, it is used to produce some of the worlds most expensive wines.
The Cabernet produced by Ernest Hill is sourced from parcels of premium quality Hunter Valley grapes, specially selected by the Ernest Hill CEO and only produced in outstanding vintages.
With an every increasing interest in Dessert style wines, we have endeavoured to create some different styles that we feel reflective of grapes grown in this region and are more suitable for our climate.
Our quartet consists of a lightly botrytised late picked Semillon 'Silver Moon', our lightly spritzy Moscato style late picked Semillon 'Luna Spark', our Dessert Shiraz 'Luna Rouge', and our Late Picked Gewurztraminer 'Moon Dance'.
